No school today and the sun is shining again (it was so wet and dull last week, I forgot what a sunny day looked like). For some silly reason (because I totally forgot there’d be no school) I made an appointment to go to my ENT this morning for a check up and to get my allergy drops refilled. I had to leave the house around 9am when I’d normally still be in pj’s sipping on my second cup of coffee! Oh well, home again now and just relaxing and enjoying the day. Jason is home too, he’s playing on the computer with Kristen.
I wanted to post once a week about my healthy eating plan, it will keep me motivated ( I hope) if I share here how I’m doing. I’m happy to report I lost 2.2lb this past week. Can’t complain at that.
As you may know I am following Weight Watchers for now, and although their point system has all changed (since Nov 2010) it is still easy to follow and it means you can eat just about everything you just have to remember to watch your portions and of course ‘count your points’.
I want to try and make a new recipe from WW each week. This past week I tried their Layered Mexican Lasagna. It was made with light sour cream, diced green chilies, chicken, black beans…. here’s the link to the RECIPE It was really good and was great with a nice big salad for dinner.
Below is a picture of one of my breakfasts this week. I never used to eat breakfast when I was younger and was out working. But that all changed a couple of years ago when I wanted to start eating better. Of course the one thing they tell you, as I’m sure most of you know, is that breakfast is the most important meal of the day. It’s how we get our bodies started, we need the fuel to get going or we’ll just slump later in the day.
I’m up at 6am during the week when school is in, which is still too early for me to want breakfast, so I usually just have a cup of coffee then I eat something like this about 8am when I get back from taking Kristen to school,(low fat waffle, low fat peanut butter, scrambled egg + 1 egg white and a cup full of fresh berries).
For lunch I’ve been having a salad and some soup (made some ww veggie soup last week, fresh veg, chicken stock and canned tomatoes – simple)
Below is a shrimp salad I had the other night. I use light mayo and fat free greek yogurt and a little ketchup to make a creamy dressing for it. Really good, really filling.
As well as these kinds of meals I’ve snacked on fruit and cottage cheese or Greek yogurt and I often have a WW ice cream cone at night.

Hi Denise! The Mexican casserole looks yummy! Checked out the recipe and will have to try that. It was nice having the day off today. tomorrow Jess and her husband are going to see Conan O'Brien so we'll have the boys until after dinnertime. Enjoy the week ahead! (((Hugz)))
I've been OK, this week. Just a small loss, but it is better than a gain, right? Keep at it, Denise - you're keeping me motivated!
I'm not on the band wagon yet need to get going!! I'm starting my treadmill tonight and starting the eating tomorrow I have to do it! :) I wanna try and get like 25 to 30 lbs off because we wanna try and start having another baby in a few months. All of your meals look delicious! Congrats on your weight loss!!

I am glad that you started your healthy eating plan again because I know you have had success with it in the past and I have enjoyed your recipes and hearing about your great meals. Are you following WW online?
I lost 11 pounds in 8 weeks before Thanksgiving and then gained it all back as I jumped into all the sweet eating. Starting in January, I cut back my carbs and have lost 8 pounds. Most of it is no sweets and no in between meal snacks. Unfortunately, I lose a lot very fast and then I come to a standstill. Still working on that.

Looks like you're really doing this the right way, too--all those healthful foods! I really need to get myself into eating more fruits and veg. It's my biggest dietary weakness. I don't usually overeat, but I don't get nearly enough healthful foods. I'm afraid that only thing I get plenty of is sugar! Thanks for inspiring me to change!

The lasagne looks good. I'm eating lots of salads too. Last week I bbq'd two chicken breasts (just chicken breast on the bone in my crock pot with some sauce poured over, cooked most of the day) I used lettuce, tomatoe, cucumber, black beans, corn and a little avocado and put the chicken on top. It was really good! I put a drizzle of a low fat balsamic on the salad. I like my salads mostly dry so dressing isn't usually an issue for me. The big thing here is that I'm exercising a lot more in recent weeks...I need to move alot because no matter how little I eat if I don't exercise the weight does not budge.
