Kooky Cupcakes . . . and other fun stuff!

It's hard to find time to blog when you're having so much fun! The last fews days have gone by so quickly. I thought I might have blogged again after Thursday, but here we are on Monday morning already. So, I better start the week off as I mean to go on. . . . and that's with a blog post!

Kooky Cupcakes? Well that's the name given to these cupcakes on the ice cream cone box and Kristen insisted all last week that we try to bake some. It's basically cake batter cooked inside the cone instead of a paper case! You wrap foil around the cones while they bake so they don't get too brown and you stand them up inside your muffin tins. I only made 6 of these but the recipe says it will make 24!!! I just made plain cupcakes with the rest of the recipe and put them in the freezer - to be taken out now and then for Kristen to have as a treat.

So here's the cakes just out of the oven, cooling. As you can see some of them were just about to spill over a little, but they were ok.

All you do next is pipe on frosting so they look like ice creams, and add sprinkles. It's that simple.

She's ready to give it the taste test :-) And yes, it got two thumbs up.

Yesterday we celebrated Grandma's (my mil) birthday and I made a special birthday lunch for her after we got home from church. I didn't take many pictures, but on the menu was :
Grilled Teryaki Salmon, asparagus, green beans and boiled baby new potatoes. I did teryaki chicken for Jason cos he doesn't like fish of any kind. I didn't have to make different desserts though - every one enjoyed the double-chocolate strawberry shortcake I made (you can click on the picture to see the recipe)

Have a great day, and I hope to post more this week (haven't I said that before?)!! We bought some new patio furniture for our deck, I'll share those pictures later this week.

lots of cooking going on with you this weekend then! I love the kooky cakes. On Martha Stewart's website, she has some cakes that are meant to look like peas and carrots, and another that look like corn on the cob. They're brilliant! If I find the link, I'll send it to you.

No idea why you can't see graphics. I can! Nikki said yesterday that she hadn't seen any backgrounds on my site, when using Firefox, she looked with IE and could see everything. I have no idea why that should be.

And not posting at the weekend is really nice. I go further than that, I don't post and I don't visit, though I do go online to check emails, and I changed the bg's that you can't see! I like feeling that I don't 'have' to visit, so for the time being, I will continue to be AWOL at weekends :O)

ok. time I was off. Have a lovely day, and thanks for the good wishes for Bill's uncle.

have a great day xxxxx

Hi Denise! The kooky cakes look yummy! That was sweet of you to cook lunch for your MIL's bday. Can't wait to see your new patio furniture.

Are you having cooler temps down your way? We were in the high 30's this morning but has now warmed up to 56. Warmer temps coming Wednesday I believe.

((BIG HUGS))

Ooooh, those look yummy!

Thank you for the comment concerning Zach. He's a good boy with a good heart, who has unfortnately fallen in with bad company... "friends" who are wasting their lives. He has so much potential and I hate to see him squandering it like this. Hopefully today will be the start of turning things around.

Kristen is such a cutie - I LOVE her little freckles across her face. So cute! I can't believe she is going on 8 years old! I can remember her in diapers - a precious little TODDLER! (Where did that toddler go??)

You girls have a good week!
Love and hugs,
Lynn

Hi Denise! The kooky cakes are soooo cute! I can't believe how neat they look when iced. I will have to do that for Elliot & Emily. Is the recipe on the cone box? Your double-chocolate strawberry shortcake looks incredible! How sweet of you to do that for you MIL. I look forward to pics of your furniture. Have a blessed week! Hugs...

Well now "Susie Homemaker" what are you going to cook for us next??? You're sure on a roll with yummy things.

The cones are a great idea for a child's party, I must tell Melissa. OK, excuse my blonde moment, but how do you make them stand up in the tin while they cook? Don't they fall over? I wouldn't have thought of cooking cup cakes this way, but it's a great idea. I guess the cones being flat on the bottom would help them stand up, but I would worry they would be top heavy but evidently not. Thanks for sharing your great idea.

Oh boy, your m-i-l is very lucky to have a d-i-l who spoils her like you do. The meal sounds delicious and the cake looks awesome! Do we get a taste test??? I bet she was very impressed.

Great idea to get some new patio furniture, so next time you have your pamper weekend you'll be extra comfy out there. Now all you need is a butler!
