Just a quick post because I said I would show pictures of the dish I made from the Clean Eating magazine. Sorry I'm posting much later than I expected to.

The recipe was actually called 'Pasta Roll-ups with Turkey and Spinach'!, and is very much like a lasagna/manicotti type dish. You make a tomato sauce with ground turkey in it, then instead of layering lasagna strips and adding a cheese mixture and the sauce, you spread out the ricotta cheese and spinach and roll up the pasta.

Spoon some of the sauce in to your glass dish, add the 8 roll ups and top with the remaining sauce.

Then add mozzarella cheese and bake in the oven. Pretty simple really, and very tasty.

We're entertaining again tomorrow so I've been busy buying food and drink and tidying up the house! My inlaws are coming over and Jason's biz partner/friend is coming with his family. It will be a kind of business/pleasure kind of meeting - giving us all a chance to socialize but also talk about work too.

ooof, a hot weekend. Well you can keep it! ;o) It's sunny today, but I think it's meant to rain again tonight and tomorrow. Yeyhey for a British summer. ha ha ha. YOu're going to need to pack a few jumpers when you come over, you're used to such hot weather now, I think it's going to shock you! :O)

So it's hot in Austin already. We've just begun winter....I am not a winter person at all, and to think I'll get two winters this year...one here and then one in the US. Oh well, it will be worth it I'm sure.
I didn't realise Jason was in business with a partner. Are Jason's parents also a part of the business too? How neat is that!
