Well it seems I’m falling behind in here since school started this week! I haven’t posted my weekly meal plan and it’s already Wednesday. School is off to a good start for Kristen despite the fact it’s all new for her and she doesn’t have any friends there yet. Thank you all for your lovely comments and for your prayers. I know it will only get better with time for her.
So, what am I doing now that I have all day every day (except the weekends) to myself you might wonder? Well, making a start on clearing up Kristen’s bedroom is first on my list. It always seems to get cluttered and messy over the summer, I guess because she’s in there more often playing and hanging out with her friends. That has what kept me from posting yesterday, I was trying to make a good start on clearing it all up, getting it organized so she can then KEEP IT CLEAN on her own!
Anyway, here is my menu for this week (which we are already half way through!):
Monday – Creamy Pork Chops w/rice + green beans.
I found this easy recipe at frugalandsimple.com I thought Kristen might like these because she often asks for Campbell’s mushroom soup for lunch – I was right :-)
Tuesday – Breakfast for Dinner – we love this, (and it’s cheap!) and this week I did biscuits and sausage gravy, scrambled eggs, bacon and home fries.
Wednesday – Pork Fried Rice (using up the extra rice and left over pork from Monday)
Thursday – Grilled chicken and yakisoba noodles (from the freezer)
Friday – probably leftovers!
Saturday – Charro beans (from the freezer) and probably grilled chicken to make fajitas.
Sunday – I’ll make Crockpot Salsa Chicken again and freeze some for later.
A lot of these meals don’t sound as healthy as I usually make, but my budget is tighter now and I have a lot of rice and pasta that I really want to use up. I can eat these meals if I just watch my portion size.
OK, off to clean up some more!

I know what you mean about falling behind. We started school today and I can already tell that it is going to take some time to adjust to our new schedule. Carla

Those pork chops sound sooo good! Being the southern girl that I am, I love casseroles and anything with Cream of Mushroom soup in it ;-).
And your little looks so pretty (and such a cool outfit) in her 1st day of school pics.
Your back porch looks so pretty too -- and green -- not easy in this heat is it? Seems all I do is water, water, water!

Sounds good Denise! I am sure Kristen will make friends in no time. We are in a not too different boat. My daughter is going up to middle school, and although she knows all the children, she was not moved up with any of her friends. But I think it worries us more than them. On the riding, it happened here a few times that she missed riding due to the heat. What can you do? She did get the OK from the ortho to go back, so sometime in the next week or two I will be making the appointment.
Hi Denise! It's always hard starting a new school but so much easier at the elementary school level. Once you get to middle school and change classes all day, it's harder to make friends than when they're all in one room for the whole day. I'm sure she'll have tons a friends in no time. she looked adorable for her 1st day! :)

Hey Denise, I came over to answer your questions about our book club. We used to all read the same book, however, we live in an area with a small library and we found that if we checked out the book from the library we all could not finish it before time for our next meeting. We dicided to choose topics or genres such as biographies, poetry, mystery, cooking, patriotic, ghost stories, etc. Then at the meeting we all share about the particular book or, in the case of cooking, recipe that we had. We have even had meetings on gardening where we shared our favorite garden books or magazines. In October we always do ghost stories. In Feb. we always do poetry. We have even had a "how to" meeting where we each taught the others how to make or do something. I hope that explains it a little better. Carla
Hi Denise. No, our TV is downstairs in our family room. The living room is attached with the dining room so we mostly entertain in the living room- especially holidays and occasions like birthdays. That's why I like a lot of seating. The furniture in there stays like new- my last sofa/loveseat lasted 30 years! I gave them to a friend who was thrilled with them! :D
