Tasty Tuesday

This week I'm taking part in two 'carnivals' - 'Tasty Tuesday' hosted by the wonderful Jennifer at 'Balancing Beauty and Bedlam' , as well as TMTT hosted by the lovely Lisa at Blessed by Grace.

I'm sharing another 'Weight Watcher' recipe this week.  SWEET AND SOUR PORK (but I used chicken!). I made this last week and served it on the night I did my first tablescape post. This is another one that I will be adding to my favorites and making on a regular basis. Once you have all the ingredients assembled it comes together  pretty quick.  Here's what you need:

1lb pork tender loin (or chicken)
2 tblsp cornstarch
1/3 cup water
1/4 cup rice vinegar
1/4 cup sugar
3 tblsp ketchup
2 tblsp soy sauce
1 tblsp canola oil
1 tblsp minced fresh ginger
2 cloves garlic, minced
1 green bell pepper
1 8oz can pineapple chunks in juice, drained

1. Combine the chicken with 1 tblsp of cornstarch and set aside. Combine the remaining 1 tblsp of cornstarch, the water, vinegar, sugar, ketchup and soy sauce in a small bowl and set aside.

2. Heat a nonstick work or deep skillet, stir fry the chicken until almost cooked through, 2-3 minutes. Add the ginger and garlic, and stir fry until fragrant, about 30 seconds. Add the bell pepper and pineapple, stir fry about 3 minutes. Add the vinegar mixture and cook stirring constantly until the mixture boils and thickens and the chicken is cooked through, 1-2 minutes.

Per serving (1 cup) 287 cals. Points: 6 (Serves 4). I added a small can of water chestnuts and some fresh broccoli to my dish which I don't think added to the points.

AS you can see I served this last week on my 'Asian Flair Tablescape' :-) Served with a small side of white rice (1/2 cup=2 pts) and extra steamed broccoli (0 pts). This meal was delicious. Having the table set like this made it all the more fun. What I would like to do next time is make the wonton soup also from my WW book. That would be a great start to the meal. . . . don't you think?

that looks too yummy for words. :O)
And your tablescape to match was inspired! I thought of you on Saturday, when I bought some sparkly napkin rings. I was wondering how and when I'd use them, which reminded me of you and your tablescape. I'll have to do something pretty and soon. I don't set the table as much as I should because little one and I tend to eat in the afternoon and Bill is often home late, so the timing is all wrong. Weekends aren't much better either! Maybe I'll make a big effort for my bd, and that will give me a bit of time to think about it. :O)

Have a lovely Tuesday. I'm worn out. A big walk this morning, a visit from my mum and a hurried rush around to tidy things up afterwards means I've been rushing about like a lunatic for hours!!!

Hi Texas girl! LOL! The S&S Chicken looks yummy! I am a fanatic about china and they have really cute Asian-style dinnerware at Bed, Bath & Beyond. I like the square plates, etc... and it's fun to eat with chopsticks. I tend to eat too fast so they help me slow down a bit.

What do I do when Ryan's not here... never a problem for me as I keep busy constantly! Never enough hours in the day. Today was my big clean day and tomorrow Jeff and I are going to see a matinee of Harry Potter.

Oh my goodness that looks delicious. Do you have to use the rice vinegar or will white vinegar work?
