To Chloe (and anyone else wondering) I used Libby's canned Pumpkin (100% Pure Pumpkin) not the Pumpkin Pie can.
After making a comment on my Facebook page over the weekend that I had pumpkin bread in the oven and was also making Pumpkin cookies, a couple of friends shouted out for the recipes. So for TTMT and Tasty Tuesday this week I thought I would do just that.

The pumpkin bread I tried was from a yummy recipe from Richella. She posted about it last week. CLICK HERE to see her recipe. And below is how mine turned out :-) Yummy! And thank you Richella.

I also made one of Kristen's favorites - Pumpkin Drop Cookies. And for some unknown reason, Kristen started calling these Pumpkin Daisies! This recipe came from a lovely 'knitting blog' friend, Leslie at A Friend To Knit With. She shared this recipe on her blog over a year ago and I've been making them ever since (and especially at this time of year too, when the kitchen smells wonderful with the scent of pumpkin). Here's the recipe. . .
Pumpkin Daisies
1 cup pumpkin
1 cup butter
1 cup sugar
1/2 tsp salt
1 tsp vanilla
1 egg
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
Blend together pumpkin, butter, sugar. Add dry ingredients. Mix well. Drop by rounded tablespoons on to cookie sheet. Bake at 350 for 10-12 minutes.
OK, now before you make these.... this was the exact recipe from Leslie's blog BUT, you'll notice that it didn't mention putting the egg and vanilla in! So after mixing the butter sugar and pumpkin with a hand held electric whisk, I then add in the egg and vanilla, whisk that for a few seconds, then I add in the dry ingredients. Leslie also mentioned that she divided her mixture and put pecans in some of them. Kristen came up with the bright idea of adding chocolate chips to ours, and let me tell you - they are DELICIOUS with chocolate in them. So once the batter is mixed I add 1 cup of semi-sweet choc chips.
These cookies come out more like 'cake' than an actual cookie texture. They were very soft and stayed soft. I emailed Leslie and asked her if this was correct because I'd never made a cookie like this before, but she assured me this is how they turn out. I personally love them, especially with a cup of coffee on a crisp cool Fall morning.

Pumpkin is one of our favorite ingredients in baked goods. Your recipes sound and looks wonderful. I have to get through zucchini season, though before I start on pumpkin.

The pumpkin Daisies look really good. Did you use a can of pumpkin pie mix or just a can of pumpkin puree?
Also, I saw on Ravelry that you gave the corrections for Hedwig's Cowl. I bought the pattern but couldn't follow it. Now, thanks to you I can knit a few for the coming cold weather.

My husband passes out loaves of pumpkin bread each year at Christmas. Two years ago, I stopped at 63 loaves...and decided to teach him how to make it. Everybody always asks for it. Hi Denise! I give the dogs a tablespoon of canned pumpkin (just plain- no spices) with their dog food. Our vet suggested it to prevent poop problems for Kaili. Tehy both love it.
We had "The Salad" and there were 2 other very pregnant ladies there. So we shall see! ;)
