Edna Mae's Sour Cream Pancakes


It was my turn to pick the recipe this week and I chose Edna Mae's Sour Cream Pancakes. I have very little experience with making my own pancakes, I usually just buy them frozen and Kristen is the only one that eats them! When I don't have frozen in I've been known to use Bisquick and make my own, and I have tried a whole wheat recipe from 'Healthy Cooking' magazine which were ok but nothing to write home about. I've never tried pancakes with sour cream in them before so, just like a lot of the other wonderful recipes in this book, I couldn't wait to try these.

You start by mixing one cup of sour cream with 7 tablespoons of flour, 1 tbsp sugar, 1tsp baking soda and 1/2 tsp salt. Stir together very gently.

next, pour in 2 large eggs whisked with 1/2 tsp vanilla extract.

Again stir gently - above is my batter all ready for pouring. . .

I think you all know how to cook pancakes right? The recipes says to pour 1/4 cup at a time to make each pancake. See the pancakes on the left, they are the first ones I poured, but I think 1/4 cup was a bit big, so I used a little less mixture for the rest.

and as quick as a flash - they're ready :-) The recipe said this would make 12 pancakes but I only got 10 out of the mixture. Let me add, 10 wonderfully delicious, hot fresh, melt in your mouth pancakes!

Verdict: I loved these pancakes, and will definitely be making them again. We all ate some for breakfast last weekend and they got thumbs up from Jason and Kristen too. What I loved about them is they are so simple to make, and the texture was nice and light, although not 'fluffy'. I found the pancakes a little flat I guess but that wasn't a bad thing. They tasted yummy and were soft and delicious - I think I liked them better than anything I've ever had at IHOP. Hop on over to Mel's and see what she thought of them!

Denise, the pancakes look SO good! I will definitely try these. In fact, you've made me want to buy the cookbook! I have really enjoyed your recipe posts. What a great idea to cook your way through the cookbook & post about it. Hope you are having a wonderful evening. Hugs!

Hi Denise! The pancakes look pretty enough to be in a magazine! I like sour cream and I bet it gives a nice little tang to the pancakes. Had my hands full with Ryan & Jacob today and they'll be back tomorrow so I'm sneaking out blogging late while I can! ;) (((Hugz)))

Yours look much better than mine did! I need one of those griddles. I think that it would make it easier than a skillet. You always take such great photos too. Glad everyone can come to your blog and see what the food should look like:)
