
Who needs 30 minutes to make a meal? This is what I made for dinner last night, and it took me all of 10 minutes :-)
Grilled teriyaki salmon, asparagus, and romaine and tomato salad. It was very quick and simple. I grilled the salmon for 5 minutes each side and the aspargus literally took 3 minutes, I just threw them in to some boiling water - sprinkled a little salt on them when they were done and spritzed a little "
I can't believe it's not butter" spray on them.

While I was eating that. . . . this was in the oven - another crustless quiche. This one is just cheese and tomato with onion. The quiche was much nicer for breakfast this morning than scrambled eggs. That's why I made this one. I think I can stomach eggs for breakfast if I have them in the form of a quiche and they really do fill me up a lot more than cereal. When Jason gets back from Denver I'm wanting him to start eating better again too. I'm hoping he can take a couple of pieces of quiche to work for breakfast to have with his morning coffee when he gets there. He doesn't eat a breakfast at home!

After the quiche came out I threw these veggies in to roast. Onions, red peppers and asparagus. I will have them tomorrow with some grilled chicken I think.

Guess what?? Doug has another trip to San Marcos as well as Stephenville, TX coming up this Spring. Guess who gets to come along!! :-) Hopefully we can figure out how to meet up since I'll only be 30 minutes from Austin! We'll "talk" once I have more details!!

at the moment I'm just loving reading cookbooks and planning things to cook. I have scanned a couple of pics of side dishes that I either want to make at Easter, or some time soon. I'll see how I feel.

Chef Denise, your salmon mean looks great. Do you grill outside or inside? On the stove or a indoor grill?
I am looking for that magazinetoday. I did not find it at the market yesterday. What sauce did you use on the salmon?
Look at you go girl, you're on a roll with these great healthy meals! They look so yummy. How is Kiki enjoying the food? Great idea to send quiche to work with Jason. I'm going to make a couple of those quiches over the weekend and freeze them, they are great. I snuck spinach and things in mine that my famiy normally are not so keen on, and they didn't really notice. I also bought a multi-layered steamer last weekend and veg in those are awesome. They really retain the taste and flavour. Have you tried steaming? Asparagus is especially good.

well, I think you underestimate how interesting your diary is actually. I know that I for one enjoy seeing what you cook, and by reading the comments here, I can see that others do too.
I don't know if it's think web world is just v. quiet in general or that people just can't be bothered to type 'hello' sometimes!. I looked at my stats yesterday, and saw how many people had been, yet I only had three comments all day. I've pre written a one line diary entry for tomorrow (I tell you this now, so you don't waste your time visiting!), because I just can't be bothered to even try to dress up my pretty mundane days to read interesting if no one is going to read it anyway! Plus, not much has happened today, nothing worth writing about anyway.
One thing I was going to say to you earlier this week and forgot was, why not get a cbox to put on the side of your diary? it would be handy for those times when Blogger is being a pain (last weekend for example, I could NOT leave a comment, it kept coming up 'error'), but also, for those people who don't have a google account, but visit and would like to leave a paw print. cbox is free, and you can customise it. Of course, if you needed any help setting it up, I'm just an email away.

it is so easy to install a cbox, and I think they are the best because you don't have to upgrade in order to customise. And it's easy peasy to use. But yes, any help needed, just shout. Just select html/javascript feature to add,and away you go!

I'm sure it will be nice to have your dh home at last. You'll have to educatue him on healthy eating, but with your wonderful cooking it should be easy!
As far as steamers go, I assume they are pretty much the same, although when I was looking, some looked a little flimsy so that was why I went with a well known good brand. I'm sure you'll be able to tell by looking at them in the store. We used ours again last night. I did the veggies in it but wasn't game to do fish as I'm worried I may not be able to get that fishy smell out. It's probably just me being over cautious, but I don't want everything from here on after to taste of fish.
