
One thing I don't really enjoy while trying to follow the South Beach Diet (phase1) is the eggs for breakfast! I'm fussy when it comes to eggs and can only 'stomach' them a couple of ways. I don't really like them fried and I don't enjoy omelets. The two ways I can usually eat them is scrambled or in a quiche. If I'm honest a quiche is the 'gentlest' on my stomach, any other preparation makes me a little queasy, even the scrambled which I try to have on SB1. So after having scrambled eggs with bacon yesterday and not enjoying them at all, I decided to try a crustless quiche. Quick and simple, I just layered cheese, bacon and tomatoes in my glass quiche dish and poured over 3 eggs mixed with 1 cup of milk. Baked it in the oven for 50 mintues, and . . . . . . . voila!

It looked yummy, and it tasted yummy. Admittedly the 'puffiness' went out of it as usual once it was out of the oven for a few minutes, so it looks kinda flat, but it was still tasty. I had a couple of pieces for dinner last night and didn't even need a salad with it! My intention is to have a slice for breakfast every other day with some V8 and coffee (I think I'll alternate and have cereal on the other days).

I made these (delicious) potato skins on Saturday night when Jason asked a few friends over to play Rockband. But I won't be eating anything like this any time soon.

Love K's motor! I can imagine how she loves driving round the close with her little mates beside her. I would not like Humbug to have one of those whilst we have one of the neighbours living here. We are in a c-d-s too, and considering it's an area with lots of families and kiddies, there is this moron who lives round the corner and always, ALWAYS drives way to fast in his van. Why he assumes no one will ever be coming the other way is beyond me. At 'their end' they have another 3 houses beside them, so people - and children - are in and out all the time, and yet he still seems to put his foot down when he goes round what must be a bit of a blind corner for him. Idiot. Makes me furious. So if he's still driving and we are still living here when humbug wants little cars, then it would be under close supervision only. It's a matter of time before the idiots hits something or someone, I'd prefer it not to be my daughter.
Now I've got that off my chest!
thanks for your comment. I only asked in passing the other day about cheese soup. I'd seen it as part of a recipe in the '5 ingredients' GP book and thought I was seeing things. I googled and got the campbells website. I assume it is really used only has a base cooking product, though I'm sure some people must like eating it as soup! I just found it amazing, I've never seen a cheese soup in a tin before!
ooh, while I think of it, I was in Asda the other day and thought of you. They now sell naan bread mix. Next time you are home you ought to stock up on it, then you could make fresh naan whenever you fancied it!
your quiche looks superb. It's more like a tortilla, a Spanich omelette. I make them from time to time, you make them on the hob, then transfer to under the grill to brown. They fluff up, but of course fall down again once they start to call. I love them. Last one I made was for the SBD and had sunblush tomatoes and leeks in it. Ooh, it was so yum! Yours looks fab, and it's a brilliant thing to have for breakfast. I'm going to be la-de-dah tomorrow and have steamed asparagus and a poached egg, if you please!
spud skins look rather nice too. I'm doing pretty well at cutting out spuds and bread this week, though I did have to snaffle some mash last week. But I think that's ok, 'cos it was to try and take away the taste of the washing up liquid I'd just managed to eat!!!! ha ha ha!
ok. got to go. Have a great day. Our weather today has been fab, cold, breezy, a few showers but mainly sun. tonight it's back to 'winter storms'! ha!

ugh, and the 'to' in 'way too fast' should have been double 'o'! Really, I ought to read through before I publish. I'm going now, before I spot another mistake. In case anyone else says 'well omelette is incorrect', I'm spelling it the British way,being a Brit!!! ;o)

Hi Denise, I should go back to the South Beach, but I usually eat o the run and that is usally toast or tortillas with something in it. SB is hard because I ahve to watch my cholsterol. I may try it though cause I have gained a lot in the middle. :( I love to read Sadie's posts! Hugs
Hi Denise! Thanks again for the flea control info. :) Your crustless quiche looks yummy! Do you use Canadian bacon? That's so much leaner and healthier. I also use egg substitute. My other main SBD breakfast is healthy whole grain cereal with mixed berries that I get frozen at Costco. Do you have Trader Joe's in Austin- theu have good and cheap cereal. (((Hugz)))
Your quiche looks fantastic, I'm going to try that. My tummy is fussy about how I eat eggs too. I don't have a gall bladder so I have to be really careful with lots of things, but this would be great even with fresh salad for lunch. Clever you, thanks for sharing that.
