You HAVE to try this!


Yes! it's another zucchini recipe! And I apologize now to those who may find this boring (but you know where the 'back' button is!)... but I have to share this with you because it is so easy and tasty. I think our zucchini plants are just about finished producing for this season but I still had a few left this weekend and I went on yet another search for recipe ideas. I mentioned in my last post that I was also on the look out for Weight Watcher recipes and I found an 'awesome' one HERE. And I have to give credit to 'Gina' because that is where I found the recipe for this soup.
I'm not gonna post the recipe.... you can find it HERE on Gina's site. What I will do is tell you this is surprisingly tasty and has only 4 main ingredients in it, those being zucchini, garlic, onion and chicken stock, finished off with two 'dollops' of lite sour cream at the end (and salt & pepper). I never thought to make soup with all the zucchini we've been getting but this is ideal. For one, it should freeze well (I haven't tried it yet) and it has only 1 WW point per cup, so it's great to have just before dinner which helps fill me up and allows me to have a smaller portion of dinner and still feel very satisfied afterwards.

I took some over to my neighbor so she could try and Connor (her 6 yr old) wanted to try it too. He LOVED it, and ate the whole bowl in about a minute! Now Kristen on the other hand wouldn't even try it - "because it has zucchini in it"! What can I say, my daughter just isn't very adventurous when it comes to food. I have to be honest I was even skeptical myself that this would taste any good and I know it was because the soup was 'green'! Isn't it funny how we are so easily deceived by just even a color. I didn't think that about the butternut squash soup because it looked all cozy and fall like when I made it.... but this one - this one was green. You find yourself wanting to just say "urghhhh" when you see it. Thankfully I'm always willing to try anything (unlike my hubby, he also said I should try it first then he'd try if I told him it was good!). He and I were both pleasantly surprised. So much so that I made a second batch of soup immediately after we tried this. Half went to my neighbor and the other half is bagged in one cup servings in the freezer.

Also this weekend I tried Gina's 'Meat Sauce' and had it with roasted spaghetti squash from the garden. This isn't THE best sauce I've ever made but it was tasty and has less than 5 points per serving.

I love your foodie related posts, but that's because I'm a total piglet and always thinking about food! :O)

Sounds like Hard Work in your house! It's the opposite here, whatever I dish up to the troops they happily scoff. It makes life very easy!

I think I'd like the soup. I think that Bill would like it too, he's more of a soup person than me.

Hi Denise! I love zuchinni so I'm sure would enjoy it in a soup. I love to grill it with red onions and red bell peppers- a great side dish. The golden yellow and orange tomatoes command a higher price at Farmer's Markets here. :) (((Hugz)))

Thanks for stopping by... I think Seattle and England are in the same latitude on the globe. Maybe that is why Seattle reminds you of England. Skies have looked threating at times in the summer, but then there is nothing... 21/2 months now of not having rain. I can take it but the natives around here are restless for rain.
